Ingredients

2 tbsp extra-virgin olive oil

1 medium yellow onion, chopped

½ tsp fine sea salt

2 tbsp Bob’s tomato paste

800 g whole canned tomatoes with liquid

480 ml vegetable broth

85 g cooked cannellini beans, rinsed and drained

2 tbsp unsalted butter, cut into pieces

1 tsp coconut sugar or brown sugar, to taste

Freshly ground black pepper, to taste

Instructions

Heat olive oil in a Dutch oven or soup pot over medium heat until simmering.

Add onion and salt; cook 7–10 minutes until tender and translucent.

Stir in tomato paste; cook for 30 seconds until fragrant.

Add tomatoes and vegetable broth; stir to combine.

Bring to a simmer over medium-high heat; cook 30 minutes, stirring occasionally, adjusting heat to maintain gentle simmer.

Remove from heat; let cool slightly.

Transfer to a blender (in batches if needed). Add beans, butter, sugar, and pepper. Blend until smooth, being careful with hot steam.

Taste and adjust seasoning with more sugar, pepper, or salt if needed.

Serve hot. Keeps up to 4 days refrigerated or 3 months frozen.
